Every part of the taro plant is edible. I Photo via Utopian Seed Project |
Our very own mad scientist Chris Smith, founder of the Utopian Seed Project, has been featured in The Guardian for his team’s work on developing climate resilient crops, including the tropical root vegetable taro.
Though taro has traditionally grown in southeast Asia + Polynesia, Chris and his team now believe it’s possible to grow the root right here in WNC as a temperate annual, due to the rising temperatures that accompany climate change. Currently, they’re experimenting with eight varieties of taro, including ones sourced from China, Hawaii, Korea, Puerto Rico, and the Philippines.
Curious about what else in the world is growing in the Utopian Seed Project’s experimental garden? Explore all the crops — from arrowroot to water chestnuts to the African potato mint — here.
